Apple & Rhubarb cobbler – naturally leavened
You will need:
juice of three oranges
4 granny smith apples
1 pear
1 bunch rhubarb
1 tablespoon ghee
4 tablespoons coconut sugar
1cinnamon quill
How to:
Pour the orange juice into a pan
Peel and core the apples and pear
Cut into bite size chunks and toss in the juice
Wash and chop the rhubarb to the pan with the ghee
And cinnamon quill
Place over medium heat
Bring to a simmer, cover and cook 5-10 minute until fruit is softened and juices have been released
Pour into a baking dish, cool slightly
Preheat oven to 190˚C
Top the fruit with the cobbler mix.
Sprinkle with a little extra sugar and bake for approximately 30 minutes or until the topping is cooked through and golden brown.
