Sourdough
Sourdough Topping – make 2hrs ahead of time is best.
You will need:
125gms spelt flour
50gms semolina
50gms oatmeal
a small pinch of salt
80gms melted Ghee
70gms coconut sugar plus a bit for sprinkling on top
100mls hungry leaven, kefir or whey
60-100mls water or milk kefir.
How to:
Combine the flour, semolina, oatmeal and salt
Rub the ghee into the flours
Combine with the sugar, leaven and milk or water
Cover and set aside to rise.
Make the fruit mix and spoon into a shallow ovenproof baking dish
daub the topping unevenly over the fruit
Preheat oven to 170˚C
Place the cobbler in the oven and bake until the top is cooked through and golden brown
To serve:
Serve with a big dollop of farm yard cream
Eating the leavened carbohydrates with some good fats slows the absorption of the sugars contained and gives you sustained energy for longer.
The fats also assist your body to recognise that you have eaten enough!
